Can I have my email pointed to my own email server?

Yes, you can redirect the MX (Mail Exchange) record via your HELM control panel.Please do the following to set your mx records :

login to Helm control panel
Click on "Domains"
Click on your hosted DomainName
Click On "Dns Zone Editor"
Set your Mx Recoreds
Click "Save"
If your DNS is hosted elsewhere, and you wish to point your MX record to Alps HOST (so that Alps HOST is doing handling the email for your domain), you will need to give the DNS Records information to the company doing your DNS so that they can change the MX record to point to Alps HOST.You can find  this information from Helm Control Panel "Domain Menu-->Domain Name-->DNS Zone Editor" section..
